CHEF ARNAUD VIOLTAT ELEVATES CULINARY EXCELLENCE AT THE PAVILIONS PHUKET, THAILAND

Boutique luxury resort, The Pavilions Phuket, is enhancing its dining experiences under the direction of Arnaud Violtat as Executive Chef. With a deep passion for culinary excellence, Chef Arnaud draws on his extensive experience in Michelin-starred kitchens to deliver exemplary dining experiences across the resort’s Firefly Pool & Restaurant, 360° Bar and signature ALTO Restaurant.

As a Michelin trained chef, with over 35 years of culinary experience, Chef Arnaud presents continuously evolving seasonal menus that reflect his passion for innovation and showcase the finest locally sourced ingredients. From organic Phuket-grown heirloom tomatoes; and sustainably sourced ‘Thai wagyu’ beef from Nornuea Farm in Thailand’s Pathum Thani province—renowned for its premium crossbred Japanese-Thai cattle; to the striking seven-coloured Phuket lobster, freshly caught in the island’s waters, Chef Arnaud is shining a light on local produce and culinary creativity. 


At ALTO Restaurant, each dish is carefully crafted to honour authentic flavours while embracing elegant and artful presentation. Guests are invited to discover a selection of signature dishes, which currently includes Smoked Salmon "À Cru" Potato, featuring delicately smoked salmon atop tender fingerling potatoes, crowned with a luxurious truffle vinaigrette and Prunier caviar; Seared Tuna alla Sicilana, a vibrant dish of tuna with tomato, black and green olives, capers, garlic and frisée salad; and Capesante Ala Veneziana, a grilled scallop paired with braised leek, topped with champagne caviar sauce and crispy pancetta.
