CHIVA-SOM HUA HIN CELEBRATES HOLISTIC WELLBEING THROUGH THAI CULINARY WISDOM AND MINDFUL GASTRONOMY

Chiva-Som Hua Hin brings its 2026 wellness concept to life through a special culinary collaboration with Bo.lan, one of Thailand’s most celebrated fine dining restaurants, inspired by the principles of Traditional Thai Medicine (TTM) and its enduring connection to Thailand’s cultural and healing heritage.
Taking place on 7th and 8th August 2026, the collaboration brings together Chef Sinchai Srivipa, Executive Chef of Chiva-Som Hua Hin, with Chef Duangporn “Bo” Songvisava and Chef Dylan Jones, founders of Bo.lan, to present two distinct dining experiences inspired by the Four Elements (Dhatu) – Fire, Wind, Water and Earth. On 7th August, guests will enjoy a six-course dinner menu showcasing the chefs’ shared interpretation of elemental balance through Thai cuisine, followed by a live-station lunch experience on 8th August highlighting seasonal Thai ingredients and traditional culinary wisdom.
Rooted in the philosophy that food can be medicine, the collaboration reflects Chiva-Som Hua Hin’s integrative wellness approach, where nourishment extends beyond nutrition to support balance across body, mind and emotional wellbeing. Guided by the Four Elements, the menu draws on Thai herbs and ingredients valued in traditional practice for their restorative properties.
Earth Element - The Earth element, associated with nourishment and vitality, is expressed through astringent, naturally sweet, rich and salty flavours believed to support strength and healthy body tissues.
Water Element - The Water element, symbolising purification and renewal, is associated with moisture, fluidity, hydration, and cleansing balance, and is expressed through sour and bitter flavours that support cooling and internal balance.
Wind Element - The Wind element, associated with movement and equilibrium, is defined by warming herbs and spices believed to support digestion and balance.
Fire Element - The Fire element, associated with transformation and metabolic energy, is expressed through bitter and cooling flavours traditionally used to help regulate internal heat and support restoration.
Bringing together Chiva-Som Hua Hin’s evidence-based wellness philosophy and Bo.lan’s celebrated “mindful gastronomy” approach, the experience reflects a long-standing shared belief in the connection between wellness and sustainability, with both partners championing mindful practices that benefit communities and the planet. The collaboration will feature two exclusive dining experiences:
7th August from 6pm to 9pm: Chef Collaboration Dinner at The Emerald Room
Guests will experience a six-course menu collaboratively created by Chef Sinchai, Chef Bo and Chef Dylan. Beginning with an amuse-bouche inspired by the four TTM elements, each subsequent course will reflect Earth, Water, Wind or Fire through carefully selected ingredients, textures and cooking techniques, culminating in a dessert course inspired by elemental harmony.
8th August from 12pm to 2.30pm: Live Station Lunch by Bo.lan at Taste of Siam
Chef Bo and Chef Dylan will also host a live culinary experience at Taste of Siam, presenting specially curated dishes inspired by Thai culinary traditions and wellness philosophies in an interactive lunch setting set within Chiva-Som’s beachfront sanctuary where gentle sea breezes and uninterrupted ocean horizons create a naturally restorative atmosphere.
The special culinary collaboration will be presented as a complimentary dining experience exclusively for in-house guests, further enriching their stay through a journey into wellness-led gastronomy. Bringing together the principles of TTM and Thailand’s rich culinary heritage, it offers a meaningful expression of wellbeing through the lens of food for guests staying at the resort throughout the two-day period.
